特點及應用:Characteristics and usage:
β-環(huán)糊精分子具有一個獨特的分子內空腔。化合物分子被環(huán)糊精空腔包結時,大大減少了其與周圍環(huán)境的接觸,可以起到許多特殊的作用,并且在工業(yè)生產(chǎn)中得到廣泛的應用。目前已知的作用有以下幾個方面:
β-cyclodextrin molecule has a unique cavity. When molecule of a certain compound is trapped in the cavity, its contact opportunity with other substances becomes noticeably less. So, β-cyclodextrin has some special functions, it is used widely in industry. Its known functions are listed below:
1. 使揮發(fā)性物質長期保持穩(wěn)定 stabilize volatile substance
① 降低揮發(fā)性物質的揮發(fā)性,并保持其氣味、風味;Reduce volatility of volatile substance to keep its smell and taste;
② 將有毒液態(tài)物質制成固體,容易保存,減少毒害;Turn toxic liquid into solid to facilitate storage and reduce toxicity;
③ 除去發(fā)臭物質的臭氣,并改善加工和使用條件;Reduce the odor of some reeking substance to improve the process and use conditions;
④ 調節(jié)芳香物質和其他揮發(fā)性物質的釋放。Adjust the release rate of aromatic substances or other volatile substances.
2. 使受熱、光、氧不穩(wěn)定的物質穩(wěn)定化 stabilize the substance that easily decomposed in thermal, light or oxygen.
① 使不耐熱物質在高溫中保持穩(wěn)定;Improve temperature resistance;
② 使紫外線和可見光下不穩(wěn)定性物質保持穩(wěn)定;Improve light resistance;
③ 使易被氧化和分解的物質穩(wěn)定。Improve oxidation resistance;
3. 改變物質的物理、化學性質Adjust physical and chemical properties
① 增大難溶或不溶于水的物質的溶解度;Increase water solubility;
② 防止色素、熒光變化;Prevent degradation of pigment and fluorescein;

4. 水不溶物的乳化、液化,如油、脂肪、脂肪酸等的乳化 Make some substances become dissolvable or emulsifiable.
5. 液體變固體,如烴、醇、酯、油、脂肪等Change some substance from liquid to solid, such as hydrocarbon, alcohol, ester and fat.
6. 用做有機化學的催化劑,選擇合成反應試劑,物質的分離、分析、醫(yī)療化驗等。Act as catalyst in organic chemistry, used in chemical separation, chemicals analysis, medical analysis and so on.
